We need to rollout MFA under Enterprise licence (2 servers), obviously we can't blindly tick as lots of internal and external users, does anyone have any recommendations for testing or staging MFA rollout.

Which product are you referring to?
Assuming it is SynaMan, we recommend not making MFA mandatory - at least initially. Have a handful of users log into their accounts, click the link for "Two-Factor Authentication" towards the bottom, and enable it.
You can make it mandatory once your initial test succeeds.
